VITUS NO-BAKE VEGAN PROTEIN BALLS

MAKES 24 LARGE PROTEIN BALLS
COOKING TIME: 10 MINUTES
INGREDIENTS:
  • 1 ½ cups rolled oats
  • 1 banana
  • 2 tbsp coconut oil (melted and slightly cooled)
  • ¼ cup almond butter
  • ¼ cup unsweetened shredded coconut
  • ¼ cup water
  • ¼ cup dark chocolate chips
  • 4 serves VITUS VEGAN PROTEIN
METHOD:

In a large bowl, mash banana and then add coconut oil and almond butter and stir to combine. Add shredded coconut, rolled oats and VITUS VEGAN PROTEIN. Stir together while adding water slowly. The amount of water needed may vary according to mixture composition. Once you have a firm mixture, fold in dark chocolate chips.

Roll mixture into balls of desired size and place in a sealable container lined with parchment paper. Place balls in the freezer for an hour to set, thereafter remove from the freezer and keep stored in the refrigerator. Consume within 10 days.

CHEF’S HINT:

Chocolate chips can be substituted with nuts, chopped dates or seeds if desired.
